Origin & craft
India is the largest producer of ginger in the world, and varieties like Rio-de-Janeiro, Maran, Nadia and Sikkim's Bhaisey have built a global reputation for high oleoresin and clean, sharp pungency. We source directly from grower cooperatives in these regions — many of them organic-certified, all of them traceable to plot and harvest.
Fresh rhizomes are washed, brushed and cool-chain shipped within 72 hours of digging. For dry ginger, we sun-cure on raised bamboo platforms, peel by hand, and bleach naturally with lime water — never sulphur — before grading on size and finish. Powder is milled fresh, sieved, and nitrogen-flushed on request to lock in the oil.
